When you have an opportunity to attend a conference on Kauai, you take it! My husband joined me in paradise, and we enjoyed some of the most spectacular scenic hikes, sunrises, sunsets, accommodations (Grand Hyatt at Poipu Beach) and meals (our favorite was Red Salt).
